Description
A refreshing fruit cocktail combining muddled kiwi and blueberries with white rum, fresh mint, and lime, topped with club soda.
Ingredients
For the cocktail:
1 whole ripe kiwi (peeled, diced)
8 fresh blueberries
8 fresh mint leaves (spearmint)
1 oz fresh lime juice
1 oz simple syrup (or 1 tablespoon sugar)
2 oz white rum
3 oz club soda (chilled)
1 cup crushed ice
For the garnish:
1 mint sprig
1 kiwi slice
3 blueberries
Instructions
1. Add diced kiwi and simple syrup to a tall Collins glass and muddle until juicy.
2. Add blueberries and mint leaves, pressing gently for five seconds to crack skins and release oils.
3. Pour in fresh lime juice and white rum.
4. Fill the glass to the top with crushed ice.
5. Stir vigorously with a bar spoon to pull fruit from the bottom.
6. Top with chilled club soda and stir once more.
7. Garnish with a mint sprig, kiwi slice, and three blueberries.
Notes
Store any leftover simple syrup in the refrigerator for up to 2 weeks.
For a less sweet drink, reduce the simple syrup to half an ounce.
Spiced rum can replace white rum for a warmer, vanilla-forward flavor profile.
Use crushed ice for the best texture and fastest chilling.
