Description

This crustless zucchini pie uses a baking mix to form its own savory crust as it bakes. Shredded zucchini, cheddar, and Parmesan cheese fold into a fluffy egg custard for a simple weeknight dinner.


Ingredients

For the zucchini:

4 cups zucchini (shredded)

1/2 teaspoon kosher salt

For the batter:

1/2 cup yellow onion (finely diced)

1 cup Bisquick baking mix

4 large eggs

1 cup whole milk

1/2 cup sharp cheddar cheese (shredded)

1/2 cup Pecorino Romano cheese (grated)

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

For the topping:

1/2 cup sharp cheddar cheese (shredded)


Instructions

1. Toss the shredded zucchini with kosher salt in a colander and let it sit for 10 minutes to draw out excess moisture.

2. Wrap the salted zucchini in a clean kitchen towel and squeeze firmly until no more green water drips out.

3. Preheat the oven to 400 degrees Fahrenheit and grease a 9-inch glass pie plate with butter or oil.

4. Whisk the eggs, whole milk, baking mix, black pepper, and garlic powder in a large bowl until smooth and free of lumps.

5. Fold the squeezed zucchini, diced onion, cheddar, and Pecorino Romano into the batter until evenly distributed.

6. Pour the wet batter into the prepared pie plate and sprinkle the remaining half cup of cheddar cheese evenly over the top.

7. Bake for 35 minutes until the top is deep golden brown and a knife inserted into the center comes out totally clean.

8. Let the pie rest for 5 minutes on the counter before slicing into wedges and serving warm.

Notes

Store in the refrigerator for up to 4 days or freezer for up to 2 months. Reheat at 350 degrees Fahrenheit for 10 minutes.

You can substitute pancake mix for the Bisquick, though the pie will be slightly sweeter.

For a heartier meal, add 1/2 cup of browned Italian sausage to the bottom of the pie plate before pouring in the batter.

Always grate your own cheese from a block so it melts smoothly into the custard.
