Description

A crustless apple pie where a simple batter of milk, eggs, and baking mix sinks to the bottom and forms its own pastry-like crust while baking, topped with spiced apples and a crunchy pecan streusel.


Ingredients

For the apple layer:

4 cups Honeycrisp apples (peeled, cored, and sliced 1/4 inch thick)

1/2 cup brown sugar (packed)

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

For the batter:

1 cup baking mix (such as Bisquick)

1/2 cup granulated sugar

1/2 cup milk

2 large eggs

1/4 cup butter (melted)

For the streusel topping:

1/3 cup pecans (chopped)

1/3 cup brown sugar

1/4 cup baking mix

2 tablespoons butter (cold, diced)


Instructions

1. Preheat your oven to 350°F and grease a 9-inch glass pie pan with butter.

2. In a large bowl, toss the sliced apples with brown sugar, cinnamon, and nutmeg until evenly coated.

3. In a separate bowl, whisk together the baking mix, granulated sugar, milk, eggs, and melted butter until smooth and thin.

4. Pour the wet batter into the bottom of the prepared pie pan.

5. Arrange the spiced apple slices evenly over the wet batter without stirring.

6. In a small bowl, mix the chopped pecans, brown sugar, and baking mix. Cut in the cold butter until crumbly.

7. Sprinkle the streusel evenly over the apples.

8. Bake for 45 minutes until the center is set, the apples are tender, and the topping is golden brown.

9. Let the pie cool for 30 minutes before slicing so the crust can firm up.

Notes

Store in the refrigerator for up to 4 days or freezer for up to 2 months. Reheat at 350°F for 10 minutes.

You can substitute walnuts for pecans in the streusel topping.

Do not stir the apples into the batter or the self-crusting process will fail.
