Description

2 oz white rum

2 tbsp cream of coconut (like Coco Real)

1/4 cup pineapple juice

1 cup frozen pineapple chunks

1/2 cup crushed ice

1/4 tsp fresh lime juice

For the garnish:

1 fresh pineapple wedge

1 maraschino cherry

1 tsp toasted coconut flakes


Instructions

1. Add the pineapple juice, cream of coconut, white rum, and lime juice to the blender pitcher first to create a liquid base.

2. Add the frozen pineapple chunks and crushed ice to the blender.

3. Blend on low speed for 10 seconds to break up the large chunks, then increase to high speed for 30 seconds until you hear a smooth, steady hum.

4. Pour the thick, creamy mixture into a chilled hurricane glass.

5. Garnish with a fresh pineapple wedge on the rim, a maraschino cherry, and a sprinkle of toasted coconut flakes.

Notes

Store any leftover blended mixture in a freezer safe container for up to 1 month. Let it sit at room temperature for 15 minutes, then scrape with a fork to restore the slushy texture.

Do not substitute coconut cream for cream of coconut, as it lacks sweetness and will clump in the cold blender.

For a non alcoholic version, simply omit the rum and add an extra splash of pineapple juice.
