Description

A savory crustless quiche where the baking mix sinks to the bottom during baking to form a tender, self-making crust while the eggs and milk rise to create a fluffy custard top loaded with bacon and cheddar cheese.

For the quiche:

1 cup sharp cheddar cheese (shredded, divided)

1/2 cup bacon (cooked and crumbled)

1/4 cup yellow onion (finely diced, sweated)

4 large eggs

1 1/2 cups whole milk

1/2 cup Bisquick baking mix

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. Preheat your oven to 400 degrees Fahrenheit and lightly grease a 9-inch glass pie plate with butter or cooking spray.

2. Spread the shredded sharp cheddar cheese, crumbled bacon, and sweated yellow onion evenly across the bottom of the greased pie plate.

3. In a large mixing bowl, whisk together the eggs, whole milk, salt, and black pepper until completely smooth and pale yellow.

4. Gently pour the Bisquick baking mix into the wet ingredients and whisk just until the large lumps disappear, being careful not to overmix.

5. Pour the thin batter directly over the cheese and meat fillings in the pie plate, allowing it to flow naturally around the ingredients.

6. Bake on the center rack for 35 minutes until the top is deep golden brown, puffed up, and a knife inserted into the center comes out clean.

7. Remove from the oven and let the quiche rest on a wire rack for 10 minutes so the custard finishes setting before slicing.

Notes

Store in the refrigerator for up to 4 days or freezer for up to 2 months. Reheat at 350°F for 10 minutes.

Grate the cheese yourself from a block rather than using pre-shredded bags to ensure smooth melting.

Do not open the oven door during the first 25 minutes of baking or the rising eggs will collapse.

Ensure all meats and wet vegetables are fully cooked before adding them to the pie plate.
