Description

Easy no bake cookie recipe made with oats, cocoa, peanut butter, and no oven needed. Quick stovetop dessert ready in under 20 minutes.

Ingredients

Scale
  • 1/2 cup (1 stick unsalted butter)
  • 2 cups sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup peanut butter
  • 2 teaspoons vanilla extract
  • 3 cups old-fashioned rolled oats

Instructions

  1. In a saucepan, melt butter over medium heat. Stir in sugar, milk, and cocoa.
  2. Bring to a rolling boil. Boil exactly 60 seconds.
  3. Remove from heat. Stir in peanut butter and vanilla until smooth.
  4. Fold in oats until fully coated.
  5. Drop tablespoon-sized rounds onto wax paper.
  6. Let cool completely at room temperature (20–30 minutes).
  7. Store in an airtight container.

Notes

  • Measure First: Have all your ingredients pre-measured before starting. Timing is key with no bake recipes.
  • Oats Matter: Old-fashioned rolled oats provide a chewy bite. Instant oats can make the cookies too soft and mushy.
  • Watch the Boil: Begin counting your 60 seconds only once the mixture is at a full, rolling boil. Use a timer to avoid under- or over-cooking.
  • Peanut Butter Swaps: Almond butter, sunflower seed butter, or even cookie butter can work as alternatives.
  • Texture Fix: If cookies don’t set well, refrigerate them for 20 minutes. Still soft? Next time, boil 5–10 seconds longer.
  • Flavor Boost: A dash of espresso powder or cinnamon enhances the chocolate notes subtly.
  • Freezing Tips: For long-term storage, layer with parchment and freeze. Great for batch-prepping school snacks.
