Notes
- Measure First: Have all your ingredients pre-measured before starting. Timing is key with no bake recipes.
- Oats Matter: Old-fashioned rolled oats provide a chewy bite. Instant oats can make the cookies too soft and mushy.
- Watch the Boil: Begin counting your 60 seconds only once the mixture is at a full, rolling boil. Use a timer to avoid under- or over-cooking.
- Peanut Butter Swaps: Almond butter, sunflower seed butter, or even cookie butter can work as alternatives.
- Texture Fix: If cookies don’t set well, refrigerate them for 20 minutes. Still soft? Next time, boil 5–10 seconds longer.
- Flavor Boost: A dash of espresso powder or cinnamon enhances the chocolate notes subtly.
- Freezing Tips: For long-term storage, layer with parchment and freeze. Great for batch-prepping school snacks.
