Description
This high-protein Cottage Cheese Sweet Potato Bowl is packed with lean ground beef, roasted sweet potatoes, avocado, and hot honey.
Ingredients
2 tbsp olive oil
2 cups cottage cheese
1–2 avocados, sliced
1 lb lean ground beef
1 packet taco seasoning
2 sweet potatoes, peeled and diced
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp salt
1/4 tsp pepper
1/2–1 cup chopped cilantro
Hot honey, for drizzling
Optional: jalapeños, lime juice, red pepper flakes
Instructions
1. Preheat oven to 425°F. Soak sweet potatoes for 30 mins (optional).
2. Toss sweet potatoes with 1 tbsp olive oil, seasonings. Roast for 25–30 mins.
3. While roasting, brown beef with remaining olive oil and taco seasoning.
4. Prepare sliced avocado and chop cilantro.
5. Assemble: sweet potatoes, beef, cottage cheese, avocado.
6. Drizzle with hot honey. Add jalapeños or lime if using.
Notes
Soaking sweet potatoes improves crispiness.
Use turkey or chicken instead of beef.
For extra spice, add hot sauce or sriracha.
